Lemon
chicken (for 4 people approx)
Ingredients:
- rice
- Chicken
breasts (3)
- Pesto (1/2
to 3/4 of a jar of 190g)
- Lemon (1
to 1 1/2 depending on taste)
- Garlic (1
to 2 cloves)
- Oil (1
tablespoon of olive oil)
- Salt and
pepper to taste
Method:
1. Put rice
onto cook.
2. Dice the chicken and place it into a frying pan.
3. Add to the pesto, olive oil and crushed garlic.
4. Cook until chicken is cooked through and make sure you are stirring occasionally.
5. Add
salt, pepper and lemon juice to taste.
6. Once you are happy with the taste, serve the rice into bowls of 4.
7. Place the lemon chicken onto the rice
